  • 2 small Sweet Potatoes, baked & cubed
  • 1 TBSP Olive Oil
  • ¼ cup of diced Red Pepper
  • ¼ cup of diced Red Onion
  • 1 cup of spinach or kale
  • 4 Eggs
  • 1 tsp of Maple Syrup
  • 1 tsp of Siracha
  • ¼ oz of Goat Cheese
