Sweet Potato & Egg Hash
- 2 small Sweet Potatoes, baked & cubed
- 1 TBSP Olive Oil
- ¼ cup of diced Red Pepper
- ¼ cup of diced Red Onion
- 1 cup of spinach or kale
- 4 Eggs
- 1 tsp of Maple Syrup
- 1 tsp of Siracha
- ¼ oz of Goat Cheese

For quicker preparation bake and cut up your sweet potatoes ahead of time.
Ahead of time bake or microwave 2 small sweet potatoes so they are cooked through.
Heat olive oil in a pan and add your chopped onion and peppers. Once soft add in your sweet potatoes and cook for an additional 2-3 mins.
Next, season with maple syrup and siracha. Once mixed add in your greens.
Divide your mixture into 4 parts so that you can make four little holes for the eggs to sit in. Cook the eggs for 3-4 mins until cooked through but still slightly runny.
Top with goat cheese and eat up!
