  • ½ cup sweet potato, cubes
  • 4 oz sweet italian sausage
  • 2 Cups Spinach
  • 4-6 oz tomato sauce, all-natural
  • 2 eggs
  • ½ oz goat cheese, soft
  • ½ tsp crushed red pepper flakes
  • 1 tsp parmesan cheese, grated

Ready in 15-20 minutes

Serves 1  person

If you are vegetarian you can omit the italian sausage. You could also substitute ground turkey or chicken instead of sausage as well! Even though this is an egg dish this can be eaten at any meal! Feel free to serve with a side of toasty sourdough bread and you are good to go!
