- ½ cup sweet potato, cubes
- 4 oz sweet italian sausage
- 2 Cups Spinach
- 4-6 oz tomato sauce, all-natural
- 2 eggs
- ½ oz goat cheese, soft
- ½ tsp crushed red pepper flakes
- 1 tsp parmesan cheese, grated

If you are vegetarian you can omit the italian sausage. You could also substitute ground turkey or chicken instead of sausage as well! Even though this is an egg dish this can be eaten at any meal! Feel free to serve with a side of toasty sourdough bread and you are good to go!
First start off by spraying your pan with olive oil cooking spray. Then chop up your sweet potato (I used japanese white sweet potato but you could really use any type of potato here). Once it is cubed add it to your heated skillet and get it nice and soft. To speed up this process you can also microwave the potato ahead of time.
Add in 1/2 Cup of crumbled already cooked italian sausage. You may need to do this step the night before if you are looking to cut down on time.
Add in 2 cups of spinach and cook for 1-2 minutes or until wilted.

Add in your tomato sauce - if you buy it plain I would add in some italian seasoning and garlic.

Next, make some nests for your two eggs. Cook through all the way and then top with goat cheese, red pepper flakes, and parm cheese. Enjoy!
