  • 2 medium sweet potato, baked
  • 6 cup kale, chopped
  • 1 ½ Cup(s) quinoa
  • 16 oz brussels sprouts, no salt,
  • 2 cups red cabbage red , shredded
  • 1 ½ avocados
  • 1 tsp everything but the bagel seasoning by trader joes
  • 3 tsp  balsamic vinegar
  • 1 tbsp extra virgin olive oil

Ready in 15-20 minutes

Serves 4  people

If you are looking to manipulate the macronutrients on this you can adjust the portion sizes  to be larger or smaller. You could also consider using butternut squash instead of sweet potato or completely eliminate the quinoa.
