Antioxidant Packed Grain Bowl
- 2 medium sweet potato, baked
- 6 cup kale, chopped
- 1 ½ Cup(s) quinoa
- 16 oz brussels sprouts, no salt,
- 2 cups red cabbage red , shredded
- 1 ½ avocados
- 1 tsp everything but the bagel seasoning by trader joes
- 3 tsp balsamic vinegar
- 1 tbsp extra virgin olive oil

If you are looking to manipulate the macronutrients on this you can adjust the portion sizes to be larger or smaller. You could also consider using butternut squash instead of sweet potato or completely eliminate the quinoa.
Before assembly of the grain bowl. Turn oven to 425 and prepare Brussel sprouts by trimming the ends and cutting them in half. Roast these for around 25 minutes and then set to the side to cool. While you have the oven going bake 2 medium size sweet potatoes. These should cook for close to 45 minutes. Once these are finished set to the side to cool off.
Cook quinoa as instructed on container. 1 cup of uncooked quinoa should be plenty to construct 4 grain bowls.
To build the base of your grain bowl put 1/3 cup of quinoa, then take 2 cups of chopped Kale for your greens, followed by 1/2 cup of shredded red cabbage, 1/2 of a cubed sweet potato, and 1/2 cup of Brussel sprouts. Next top with 1/4 of an avocado, a sprinkle of Trader Joes Everything But the Bagel Seasoning (or your favorite spice blend), and then drizzle with Extra virgin Olive oil and Balsamic Vinegar!
