Cauliflower Fried Rice
Serve as a vegetarian option or top with Thai BBQ shrimp, chicken, or pork.
Add 1 TBSP of olive oil to a warm skillet. Then add 1 clove of garlic and 1/2 tsp of grated ginger. Cook for 1 minute or until softened.
Next add 10 oz of frozen riced cauliflower and mixed veggies to the pan. Cook for 4-5 minutes or until softened. Add in 1 TBSP of Soy Sauce and cook for an additional minute.
Take 1 egg and whisk it and then add into the pan and fry with the cauliflower mixture.
