Ingredients
- 2 Cups spinach
- 4 oz salmon, cooked
- 1 egg, hard boiled
- 2 TBSP black olives, canned
- ¼ cup cherry tomatoes
- ½ medium sweet potato, no salt, baked
- ½ green snap beans, no salt, boiled
- 2 TBSP lite honey mustard vinaigrette

Preparation

Pre-heat oven to 375 and bake salmon for 20 minutes.

After Salmon is complete turn the oven up to 425 and bake sweet potato at 425 for ~40-45 minutes.

Steam green beans over boiling water until reached desired consistency.

Chop up all other veggies and place over bed of spinach

Top everything with honey mustard vinaigrette.
