Chicken Parm With Zoodles

  • 2 large chicken breast, cooked
  • 1 egg
  • ¼ cup almond meal flour
  • 2 oz parmesan cheese, shredded
  • 2 medium zucchini
  • 1 tbsp extra virgin olive oil
  • 1 cup marinara sauce (rao's homemade)
  • ¼ tsp crushed red pepper flakes
  •  

INSTRUCTIONS

  • 1. Preheat oven to 375 degree and begin to prepare chicken by making an egg wash in one bowl and pouring the almond meal flour in another.
  • 2. Dunk the chicken breasts in the egg wash followed by the almond meal. Once they are coated well put them onto baking sheet and bake for 15-20 minutes.
  • 3. The last 3-5 minutes take the chicken out of the oven and sprinkle with the Parmesan cheese. Then put back into the oven until the cheese is melted and golden brown.
  • 4. Either purchase zucchini already spiralized or use your spiralizer to create zucchini noodles or zoodles. Then heat EVOO in a pan on medium heat and gently toss the zoodles in the EVOO and a dash of red pepper flakes.
  • 5. At the same time heat up your marinara sauce (I prefer the brand Rao's homemade as they have no added sugars.
